Adam Bourke started Bourkies Bakehouse in 1989 after learning the bread and pastry trade. In 1997 the shop, on the corner of High and Forest streets, Woodend expanded, allowing for 30 people seated inside and 16 outside.

From an original staff of 12, the business has grown to now employ 42 staff including 11 full-time and 31 part-time. Over the past 23 years about 200 local residents have been employed in retail, production, administration and cleaning roles. Moving into the 21st century also saw the installation of a new shop fit out in November 2009 and a shift in marketing towards online and in-store promotions.

Bourkies is also a tourist drawcard. In 2010 the store renovations were complemented by a striking display of photos depicting images of the Macedon Ranges ranging from local footy action to native wildlife, agriculture, snowscapes and aerial mountain shots. Numerous industry awards have earned Bourkies the respect of bakers across Australia and validated the high praise from customers.
